Roasted Acorn Squash with Butter and Brown Sugar
This is a farm favorite and so easy to make. Make it as a simple side for a weeknight dinner or as something beautiful to serve to friends at your next gathering.

Directions (equally as simple)
Cut squash into halves. Be careful here-use a big sharp knife-it will make things easier and safer!
Scoop out seeds so that there is now a hollow space in each half.
Place the halves, flesh side up on a baking sheet.
In each half put about 1-2 tbsp of butter and 1-2 tbsp brown sugar (less if you don't want as much sugar). You could also use maple syrup or honey.
Roast at 350 for about 45 min. Check with a fork to make sure that they are tender before removing. Roast longer if necessary.
